Of all the cakes on my blog, this Strawberry Cake continues to be a standout family favorite. I can't tell you how many times I've made this throughout the years.

Yesterday, we celebrated my husband, Brad's, birthday. We sure do love this guy, and we're constantly laughing at all of his antics...We think he's pretty great.💓
He requested this strawberry-filled, deliciously sweet dessert for the big day, so Caroline and I got to work whipping one up. It has a strawberry cream cheese icing that's just perfect, as well.
I prefer using fresh strawberries and pureeing them myself, but you can use frozen in a pinch.
Simply Delicious Strawberry Cake

1 box white cake mix
1 (3-ounce) box strawberry flavored instant gelatin
1 lb. fresh strawberries, pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water
Strawberry Cream Cheese Frosting (recipe follows)
Garnish: sliced fresh strawberries
Directions:
Preheat oven to 350 degrees. Lightly grease and flour 2 round 9-inch cake pans.
In a large bowl, combine cake mix and gelatin. Add 10 ounces of the pureed strawberries (saving the remainder for the icing...don't discard!), eggs, oil, and water; beat at medium speed with an electric mixer until smooth.
Pour into prepared pans, and bake for 25-30 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans, and cool completely on wire racks.
Spread Strawberry Cream Cheese Frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.
Ingredients:
1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
1/4 cup pureed strawberries (left over from cake ingredients)
1/2 teaspoon strawberry OR vanilla extract
7 cups confectioner's sugar
Directions:
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup strawberry puree. Beat in extract. Gradually add confectioner's sugar, beating until smooth.
