Amazingly Easy (& Delicious) Banana Muffins


When life gives you ripe bananas, make these incredible muffins!

With autumn finally here in all its crisp air, gorgeous-colored glory, I unsurprisingly have been bitten by the baking bug lately.  It happens every year without fail.  There's just something about the smell of a something delicious baking in the oven that makes fall feel that much more like fall.

The other day, I had a craving for banana muffins, and I just so happened to have 4 ripe bananas hanging out on the kitchen table.  

Perfect!

I found this recipe over at Cat Can Cook, and I had a winner.  It's undoubtedly very easy and you've probably got all of the ingredients in your kitchen.  It's easy...Mix the wet ingredients together.   Mix the dry ingredients together.  Combine.  Bake.  Voila!

This recipe's simplicity and great results are going to make it a favorite of ours for years to come.

Amazingly Easy (& Delicious) Banana Muffins
Adapted from: Cat Can Cook
Makes 12 muffins

Ingredients:
4 large, ripe bananas, mashed

1/2 cup white sugar
1 egg, beaten
1/3 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour

Directions:
Preheat oven to 350 degrees F.

Mix the mashed banana, sugar, egg and butter together in a small bowl. Set aside. In a separate bowl, whisk together the baking soda, baking powder, salt and flour. 

Add the dry ingredients to the wet ingredients and mix well.  Pour into greased muffin tins, and bake in preheated oven for approximately 20 minutes. 

Cook's Notes:
*These are much more flavorful the next day, and they freeze very nicely too!
*Possible additions:  walnuts, toasted pecans, or chocolate chips

These are AMAZING, thank you for sharing! They are quick and easy and turn out moist and delicious every time!!! My favourite is to add blueberries - YUM!!!

This is such an easy to do snack. I've made them several times and will continue to make them. I added pineapple tonight. Yummy!!!!

I made these and it was delicious. I will say that I wasn't impressed with them at first, but when I ate some the next day- wow! SO much better and incredibly yummy. So if you're giving some away, I suggest making them the night before.

I made these today the only thing I added was half a cup of chopped pecans they came out perfect but I only had three bananas and I took a chance and made these wonderful banana muffins they came out perfect nice and fluffy and moist they taste awesome.

My Favorite Quiche!

***It's not often that a recipe is worthy of re-posting.  I think I've only done that once or twice in the entire time I've written this blog.  However, this is one of those rare occasions.  Back in 2009 when Brad and I went to Europe, we had the most amazing Quiche Lorraine at the incredible Les Deux Magots cafe in Paris.  It was delicious and was served alongside a yummy salad of fresh greens (Quiche Lorraine sur Salade Verte).  Oh, it was heaven on a plate!  It also didn't hurt that we were sitting on the patio of one of the most famous cafes in Paris, after all...haha.  The atmosphere and people-watching in that particular area are hard to beat. I'll never forget the elderly lady that was sitting at the table right next to us (the tables were situated pretty close together).  She was dressed to-the-nines, was all by herself, and was just the quintessential, classy Parisian lady.  I wish more than anything that I had tried to strike up...

Absolutely Sinful Cinnamon Rolls

***Alrighty, here are the cinnamon rolls that I mentioned in my previous post. I put these together on Christmas Eve, and then baked them on Christmas morning. Let me just tell you...there's nothing quite like the smell of yummy cinnamon rolls wafting through the house on Christmas morning...ahhhhh...so wonderful! This is going to be a new tradition for us...fresh, homemade rolls on Christmas. I thought that I might try this recipe, and then maybe try a new one next year...until I found one that I really loved. However, I hit the jackpot on the first try! This is THE recipe that I'll always use.
