Bacon & Goat Cheese-Stuffed Pork Tenderloin with Apple Chutney + A GIVEAWAY



This week kicks off a virtual potluck, celebrating Tasia Malakasis' beautiful new cookbook, Tasia's Table, Cooking with the Artisan Cheesemaker at Belle Chevre...I'm excited to be a part of this fun event!  When the folks at Belle Chevre asked me to pick out a recipe from the cookbook, I had a hard time deciding on just one.  However, this recipe for Bacon and Goat Cheese-Stuffed Pork Tenderloin with Apple Chutney stood out and was calling my name.

This is an outstanding meal, which actually isn't too complicated to make.  The ingredients are simple and the results are savory, scrumptious and comforting.  A pork tenderloin is stuffed with a trio of goat cheese, bacon, and fresh parsley.  After a quick trip to the skillet to brown the tenderloin, it roasts in the oven until done.  The tenderloin is topped off by a few spoonfuls of an easy apply chutney, adding a fruity-citrusy flavor to round out the entire meal.  Plus, on top of all that deliciousness, the rendered bacon fat is used to brown the tenderloin AND is used to saute the onions and apples for the apple chutney.  This means every bite is infused with bacony (is that a word?) goodness.

This meal would be perfect for dinner guests and is a wonderful way to showcase all the apples which are now in season.

Apple Chutney

Bacon and Goat Cheese-Stuffed Pork Tenderloin with Apple Chutney

Ingredients:
1  1/2 - 2 pounds pork tenderloin, fat and sinew removed
3 slices bacon
4 ounces Belle Chevre goat cheese, crumbled
1/4 cup flat-leaf parsley, coarsely chopped
1 tablespoon extra-virgin olive oil
Black pepper, freshly ground, to taste
4  8-inch lengths of kitchen twine

Apple Chutney
1 small red onion, minced
1 tablespoon butter, unsalted
1 small Fuji apple, minced
1 tablespoon lemon juice
1 tablespoon honey
1 tablespoon rice wine vinegar

Directions:
Preheat the oven to 450 degrees and line a broiler pan with foil.

Fry the bacon in a large skillet, reserving the pan when done.  Pat the bacon dry with paper towels and chop.

Butterfly the pork tenderloin lengthwise, slicing it down the center, but not all the way through.  Open it up, and cover it with a sheet of plastic wrap.  Pound it evenly with a kitchen mallet or heavy-bottomed saucepan.

Remove the plastic wrap and sprinkle the inside evenly with the bacon, goat cheese and flat-leaf parsley.  Close the tenderloin back up and tie in four evenly-spaced places with kitchen twine to keep it shut.  Coat with olive oil and sprinkle with pepper.

Brown the tenderloin in the pan used for frying bacon.  When all sides are brown, place it on the broiler pan and bake it in the oven for 20-30 minutes, or until a meat thermometer registers 165 degrees F.

While the pork is cooking, make the chutney.  Using the same skillet used for the bacon and browning the tenderloin, cook the onion with the butter on medium-high heat.  After about five minutes, add the minced apple, cooking for another five minutes, stirring occasionally.  When the apple and onion are soft, turn the heat up and add 1 tablespoon each of lemon juice, honey and rice wine vinegar.  Stir on high for five minutes.  The mixture should turn golden brown.  Reduce heat to low and simmer.

When the tenderloin is done, slice it into medallions and arrange on a plate.  Top with spoonfuls of the chutney, and put the remainder into a bowl for the table.

GIVEAWAY - Win a 5 lb. Food Scale from OXO!



Boy was I excited when I was selected to participate in the OXO Blogger Outreach Program recently.  As part of the program, they sent me one 5 lb. Food Scale with Pull-Out Display to put through its paces, and a second one to giveaway to one lucky reader!!!

A food scale is one of those things that I've been wanting to purchase for a while now, but for some reason or another just haven't gotten around to it.    They come in handy in the kitchen in so many situations.

There are several things that I love about this particular OXO scale:

1.  It's small, slim and doesn't take up a lot of room in my kitchen. This is great, because cabinet space real estate is getting harder and harder to come by around here!
2.  The digital display is easy to read, with large numbers and an illuminated background.
3.  If you're measuring something in a large bowl, you can pull out the display so that you can still see it.  This is a really great feature and avoids large objects covering the numbers.
4.  There's a handy little capacity indicator on the display, which lets you know when you're getting close to the maximum weight the scale will allow.

As far as cons go, I haven't found many.  If I'm just being VERY picky, I would say that the pull-out display doesn't always just snap right back into place.   Although, this hasn't been a problem for me.  Again, that's just if you want me to be picky!

An "Amazing" Giveaway! + Chicken Linguine w/ Kalamata Olives, Cilantro, Fresh Mozzarella & Toasted Almonds


 
I'm so excited that the new Sugar & Spice by Celeste Facebook fan page hit 500 fans yesterday!  Thank you all for the support...You guys are awesome!


To celebrate, how about a giveaway?!  The awesome folks at Amazing Taste recently sent me some goodies to give to one lucky blog reader.  I use this brand of spices all the time and am very happy to be able to give a great selection to the winner.  


The thing I love about these spices is that they make my life a lot easier on busy weeknights.  They're an easy way to add tons of flavor without spending long in the kitchen.  Plus, they are all natural and contain no MSG.    
 
I recently used the Chicken Seasoning in a pasta dish, which turned out to be a new favorite.  I just adore cooking pasta dishes.  It's fun to experiment with different veggies and ingredients, to come up with something delicious...yet uncomplicated!  The following recipe was the result of  using what I had on-hand in my kitchen at the time.


One of my favorite elements of this recipe is the fresh mozzarella...added between the pasta and the sauce.  This method causes the cheese to slowly melt into all of the ingredients...Heavenly!

Chicken Linguine with Kalamata Olives, Cilantro, Fresh Mozzarella & Toasted Almonds

Ingredients:
2 boneless, skinless chicken breasts
1 tbsp Amazing Taste Chicken Seasoning
3 tbsp Extra Virgin Olive Oil
1/2 red onion, chopped
5 oz mushrooms, sliced
2 cloves garlic, minced
2 large tomatoes, diced
5-10 Kalamata olives, pitted and minced
2 tbsp fresh cilantro, chopped; plus extra for garnishing
1/2 cup reduced sodium chicken broth 
Salt & Pepper, to taste
13.25 oz box whole grain linguine
Fresh mozzarella, sliced
1/4 cup sliced almonds, toasted (How to Toast Almonds)



Directions:
Preheat your oven to 350 degrees F.

Place the chicken breasts in an ovenproof dish and drizzle with 1 tbsp Extra Virgin Olive Oil.  Sprinkle with the Amazing Taste Chicken Seasoning.  Bake for 35-40 minutes, or until the chicken is cooked through.  Cut the chicken into bite-size pieces.  Set to the side.

Meanwhile, drizzle 2 tbsp of the olive oil into a medium skillet, over medium heat.  Add the red onion and saute until tender, about 5 minutes.  Next, add the mushrooms and continue to saute until the mushrooms are soft and golden brown, another 5 minutes.  Add the garlic to the skillet and saute for 1 more minute, or just until the garlic is fragrant. 


Next, add the tomatoes, Kalamata olives, 2 tbsp of the cilantro, diced chicken breasts, and finally the chicken broth.  Stir thoroughly and continue to simmer over medium-low heat, until the sauce thickens a bit, about 15 minutes.  Season with salt and pepper, to taste.


While the sauce simmers, boil the pasta according to package directions.


Once the sauce is finished, place a serving of pasta on each plate, topping it with several slices of fresh mozzarella cheese.  Next, spoon the sauce over the pasta and cheese.  Garnish each plate with a handful of toasted almonds and reserved cilantro.

You know what's really weird? When your whole body shakes uncontrollably for no apparent reason. That's what's been going on with me since last June - my muscles jerk and convulse as if I'm having a seizure except I'm fully aware of my surroundings. Sometimes it only lasts for 15 minutes, but it's gone for as long as 3 hours nonstop. There's also heartburn, nausea, hot flashes, skipped menstrual cycles, and dizziness. After 8 doctors and numerous tests, I'm still a mystery. To try to help myself, I've completely overhauled my lifestyle by exercising and changing my eating habits. Rather than poptarts, Lean Cuisines, and Bird's Eye Voila meals, I now eat organic fruit smoothies, salads, natural sandwiches on Food for Life bread, and lots of dinners from scratch.


In September, the muscle spasms occurred 3-4 times a week. Now they occur about once a month. The other symptoms are less severe as well. So while the doctors haven't officially diagnosed me, I know I'm at least on the way to recovery. However, after so many doctor bills (and the salary of a teacher's aide), the $50 gift card would be a big help in buying the natural, organic foods that I know my body needs.
