Christmas Giveaway - Christmas All Through the South - Southern Living

First of all, Merry Christmas everybody!  It's that time of year again...my absolutely favorite.  A time that was so magical as a child, and yet still finds a way to be magical as an adult.  All of the twinkling lights, hot cocoa, holiday movies and music makes my heart happy.  And let's not forget the true meaning of Christmas!

Today, I bring you a truly magnificent Christmas book by the awesome editors at Southern Living - Christmas All Through the South.  When I first received this book to review, I was delighted with the cover.  It's so festive and pretty, and it's made a beautiful display on my kitchen counter this holiday season sitting on its easel.  It's a rather large book filled with gorgeous, full-color photos, which I love.

One of my very favorite aspects of the book are the personal stories from all over the region.  Reading through them truly put me in the Christmas spirit.  There's a great Foreword by Rick Bragg, and the book is broken out into 5 Parts:  Joyful Anticipation, Delightful Destinations, Heartfelt Gatherings, Sparkling Celebrations and Festive Recipes.

I particularly loved the photos of Southern homes all decorated for the holidays.  They gave me some wonderful ideas and inspiration for what to do with my own home.  

I found the dessert recipes in this book to be particularly spectacular.  I had to pick my jaw up off the floor after seeing the recipes in the Christmas Morning Brunch and The Grand Finale/Christmas Cakes sections.  The giant stacks and tiers of Hummingbird Pancakes, Italian Cream Pancakes and German Chocolate Pancakes resemble tall layer cakes more than pancakes - a true feast for the eyes!  The Chocolate-Toffee-Gingerbread Cake, Layered Peppermint Cheesecake and Gilded Bourbon-Chocolate Cake had my mouth watering.

The dinner menus found within each section are also special, and I love that there's a summary of all of these recipes in the back of the book.  It's a well thought-out book that you'll cherish for years to come, for sure.

COOKBOOK GIVEAWAY + Fried Egg Sandwich w/Bacon & Arugula



A few weeks ago, we ventured to a wonderful little place called McEnally's Mercantile in Pinson, AL.  It's a great little store, and I hate that it took me so long to discover it.  Their website describes it as:  "McEnally’s Mercantile is a family-owned general store offering hardware, home & garden items, grocery, feed & supplies for those seeking locally made products, home-grown foods and DIY home & décor items."  

When we walked through the front entrance, we were immediately greeted by the inviting smells of farm-fresh local greens being sauteed in coconut oil with bell pepper, onion, tomatoes and topped with some of the best bacon you've ever had in your life...all being prepared by a local farmer.  After seeing the rows and rows of local produce, milk, butter, freezers of local meats and several aisles of organic products, I knew I had found my new favorite little place to shop.

I filled my cart with peppery arugula, farm fresh eggs from Bartlett Farms, leafy kale, tomatoes, beef, chicken, among other delicious finds.  The next morning, I flipped through a copy of my newest cookbook from Southern Living, Comfort Food Made Easy, and came across this egg-cellent brunch idea.  It was perfect - I could utilize the arugula, onions and eggs from our shopping trip the day before.  Yes, please!

The original recipe called for pancetta, but I substituted with crispy bacon.  I also made my own hollandaise sauce following THIS RECIPE.  The final results were sublime.  Brad and I were both sad when our last bites were gone...Seriously folks, this was plate-licking good!  Buttery, toasted bread is topped with vibrant arugula that's been lightly dressed with a mixture of red onion, parsley, olive oil and lemon juice.  Next, the bacon and fried egg are added, and the entire mountain of deliciousness is finished with a drizzle of hollandaise sauce and a sprinkling of sun-dried tomatoes.  OH MY YUM!

This cookbook has quickly become one of my favorites.  Southern Living magazine has been a long-time go-to recipe source for me, and this book is a great compilation of comforting dishes.  The recipes are truly easy and the book is packed with mouth-watering photos, which is a must for me.  You can find more info about the book HERE

Fried Egg Sandwich with Bacon & Arugula
Adapted from:  Southern Living: Comfort Food Made Easy, Oxmoor House 2014

Ingredients:
  • 4 (1/2-inch-thick) challah bread slices
  • 2 tablespoons butter, melted
  • 1 (0.9-oz.) envelope hollandaise sauce mix
  • 1/4 teaspoon lemon zest
  • 1 1/2 teaspoons fresh lemon juice, divided
  • 2 cups loosely packed arugula
  • 1/2 cup loosely packed fresh flat-leaf parsley leaves
  • 1/4 cup thinly sliced red onion
  • 3 teaspoons extra virgin olive oil, divided
  • 4 large eggs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • 8 slices thick-cut bacon, cooked
  • 2 tablespoons chopped sun-dried tomatoes
Directions:
1. Preheat broiler with oven rack 5 to 6 inches from heat. Brush both sides of bread with butter; place on an aluminum foil-lined broiler pan. Broil 1 to 2 minutes on each side or until lightly toasted.
2. Prepare hollandaise sauce according to package directions; stir in zest and 1/2 tsp. lemon juice. Keep warm.

3. Toss together arugula, next 2 ingredients, 2 tsp. olive oil, and remaining 1 tsp. lemon juice.


4. Heat remaining 1 tsp. olive oil in a large nonstick skillet over medium heat. Gently break eggs into hot skillet; sprinkle with salt and pepper. Cook 2 to 3 minutes on each side or to desired degree of doneness.


5. Top bread slices with arugula mixture, bacon slices, and fried eggs. Spoon hollandaise sauce over each egg, and sprinkle with tomatoes. Serve immediately.

White Chocolate Raspberry Biscuit Bread Pudding + A GIVEAWAY!


Did you know that it's National Biscuit Month?  Pretty awesome, huh?  What do you say we celebrate by making a mouth-watering, ridiculously delicious white chocolate bread pudding.  BUT - This isn't just any old bread pudding.  It's made with made-from-scratch buttermilk biscuits, which give it an incredible texture and presentation.   In fact, my father-in-law is a self-proclaimed bread pudding expert, and he deemed this bread pudding one of the best he's EVER had...That's serious stuff, folks!  :)


Trust me, there will be audible OOHs and AHHS when you pull this baby out of the oven.  The biscuits are cut in half and arranged prettily in a pie plate, only to be topped off by fresh raspberries and then smothered with a creamy white chocolate mixture that you'll want to take a bath in.  

Um, yes, please!

White Chocolate Raspberry Biscuit Bread Pudding
Adapted from:  White Lily

Ingredients:
8 to 9 prepared White Lily Light & Fluffy Biscuits (recipe below)
6 ounces fresh raspberries (about 1 1/2 cups)

1 (12 oz.) package white baking chips
1 cup milk
1 cup heavy cream
3 eggs
2 egg yolks
1/4 cup sugar

Directions:
HEAT oven to 325°F. Coat 9 1/2- inch deep dish pie plate with no-stick cooking spray. Slice biscuits in half horizontally. Arrange, split side up, in a circular pattern in prepared pie plate. Arrange raspberries randomly over biscuits.

Microwave baking chips in uncovered microwave-safe bowl on medium high power for 1 minute and 15 seconds. Stir. If necessary, microwave at 15 second intervals, stirring just until melted. 

Combine milk and cream in medium saucepan. Bring to a boil over medium heat. Whisk eggs, egg yolks and sugar in large bowl. Gradually whisk in hot milk mixture and melted baking chips until blended.

Ladle egg mixture gently over biscuits until almost full, pressing down slightly to submerge. Let stand 20 minutes. Add remaining egg mixture as biscuits absorb liquid. Bake uncovered 45 to 50 minutes or until firm and knife inserted 2 inches from edge comes out clean.

White Lily Light & Fluffy Biscuits

Ingredients:
2 cups White Lily self-rising flour
1/4 cup all-vegetable shortening, chilled
2/3 to 3/4 cup buttermilk or milk

Directions:
Heat oven to 500 degrees F.  Coat baking sheet with no-stick cooking spray.

Measure flour into large bowl.  Cut in shortening with pastry blender until crumbs are the size of peas.  Blend in just enough milk with fork until dough leaves the sides of bowl.

Turn dough onto lightly floured surface.  Knead gently 2 to 3 times.  Roll dough to 1/2 inch thickness.  Cut using floured 2-inch biscuit cutter.  Place on prepared baking sheet 1 inch apart for crisp sides or almost touching for soft sides.

Bake 8 to 10 minutes, or until golden brown.

Quinoa with Pork, Parsley & Bell Peppers + A Gourmet Garden Giveaway!


In celebration of surpassing 2,000 Facebook fans, let's have an awesome giveaway, shall we?!

I recently met Mary from Gourmet Garden at FoodBlogSouth 2013 back in January.  They were sponsoring the conference, and I got to taste samples of their goodies.  I love the convenience of their products, because I'm not always able to have a big selection of fresh herbs hanging out in my fridge.  That's where Gourmet Garden really comes in handy.  

Their herbs are organically grown, and then washed, chopped, blended, and packed into handy little tubes for everyday use.  They also last months in the fridge, which is another big plus for me.  Some of their varieties include Parsley, Cilantro, Chili Pepper, Basil, Garlic and even Lemon Grass!

Last night, I whipped up their recipe for Quinoa with Parsley & Bell Peppers.  I added some diced, leftover roasted pork loin from the night before, taking it from a simple side dish to a full meal.  This dish was a healthy and easy weeknight recipe, packed with yummy flavors.  In my book, that's a winner!

 First up, here's the recipe (keep scrolling for GIVEAWAY details!):



 
Quinoa with Pork, Parsley & Bell Peppers
Adapted from:  Gourmet Garden

Ingredients:
1 cup quinoa
1/2 cup wild rice
1 Tbsp olive oil
8 oz. mushrooms, diced
1/2 cup diced green onions
1 small red bell pepper, diced
1 small yellow bell pepper, diced
1 tsp Gourmet Garden Parsley
1 tsp salt
1 tsp Gourmet Garden Chili Pepper 
2 cups diced, roasted pork loin (see note below)

Directions:
Rinse quinoa.  In a large skillet, bring 2 cups of water to a boil.  Add the quinoa, stir, reduce heat to low and cover.  Continue to  simmer, about 15 min.   

Ina  medium saucepan, bring 2 cups of water to boil.  Add the rice and cook over low heat, stirring occasionally until done, about 40 min.  Drain, if necessary.


In a large skillet, heat the olive oil over medium heat. Add the mushrooms, green onions, bell peppers, parsley, and chili. Cook, stirring, for about 5 minutes. Add quinoa and rice.  Stir.  Serve warm.

Note:  I added about 2 cups of diced, leftover roasted pork loin to this dish, which made it a full meal!  Leftover chicken would also be great.

I recently had the opportunity to have lunch with 2 awesome reps from Calphalon, and they told me about something that I think is really cool.  They have a new program called "Your Set by Calphalon".  Have you ever gone to purchase a new set of pots and pans and wished that you could customize your set instead of being stuck with whatever pots were already included in that particular box set?  The brilliant people at Calphalon have remedied that whole problem.  They've got a wonderfully interactive website where you can pick and choose exactly which pots you want in your set, so that you can create something special and unique...totally tailored to the way YOU cook. 

Starting with a 5 piece base set of core pieces from either Unison Nonstick or AccuCore Stainless Steel, you can add up to 8 pieces from either - or both - collections.  So, you could basically have it all, within one set...the convenience of nonstick pans, and the classic performance of stainless steel.  Pretty cool, huh??

What I really love about the whole thing is the interactive website, which allows you to not only shop by product but by technique and cooking style.  The website will make recommendations for you based on whether you want a pot that's best for soups, braising, stir-frying, roasting, sauteing, etc.  Inspirational menu suggestions, detailed use recommendations and great photography/video all come together to round out the experience.

PRODUCT REVIEW:  AccuCore Stainless Steel 3 qt. Saute Pan & Cover
Calphalon gave me an "AccuCore Stainless Steel 3 qt. Saute Pan & Cover" (photo above) to take home for a test drive.  I had never really cooked with stainless steel before, since my current set is all nonstick.  I love how easy the nonstick pans are to clean.  However, it only took me a few uses with this stainless steel pan to see the difference.  I've already put it through its paces, and it has impressed me every single time.  It's a product that you know is built well.  It feels solid and performs incredibly.

I was worried about food getting stuck or burnt, but I was pleasantly surprised.  So far, no problems at all.  The AccuCore products have a 5 layer construction with a copper core, two internal aluminum layers, and a brushed stainless steel cooking surface and exterior.  The copper core produces controlled, even heating and totally eliminates hot spots.  It was also surprisingly easy to clean, which made me happy.  Plus, it's dishwasher, broiler and oven safe, with a full lifetime warranty.

In summary, I'm so impressed with this saute pan, that I'm seriously considering purchasing an entire set from the AccuCore line.  My current set has seen better days, so it's almost that time.  And I'm not just saying that because Calphalon gave me one to try.  This is an honest review of a product that I feel is a great one.  That's why I'm so excited about this giveaway! :)

My Interview with John McLemore + A GIVEAWAY



I recently had the chance to sit down with chef, cookbook author and CEO of Masterbuilt, John McLemore, for a delicious lunch here in Birmingham, AL.  John was in town for the day on a media blitz, and I'm so thankful that he took the time to meet with me.  Upon arriving, I was greeted by the entire gang - his wife Tonya, his daughter, his Social Media Specialist and even his pilot!  We had a great time at lunch, and I immediately felt like I had known them for years...What a wonderful group of folks.  We talked about all kinds of fun things - memories of his Memaw's Southern Fried Chicken, the story surrounding his most unforgettable meal, the strangest thing he's ever eaten (it was in China!) and even a visit with Paula Deen, in which she prepared an amazing breakfast spread for John and his family at her home.  

I love that John's cookbooks have such a big focus on family.  Flipping through his cookbook is like looking through a family album, filled with wonderful stories, photos and recipes.  Masterbuilt is their family business, and was first started by his father back in 1973.  When he was 19, John and his brother Don became part-owners with their father, and in 1998, John and Don became sole-owners of Masterbuilt.

Read on for more of my interview with John:

1.  Where in the south did you grow up?
I was born in Hawkinsville, GA and moved to Columbus, GA at 6 years old.

2.  Is there a particular family recipe that means the most to you?
MeMaw's Southern Fried Chicken.  We used to fight over the skin!  It's the only recipe that appears in both of my cookbooks. 

3.  What's the secret to the perfect southern fried chicken?
Soak the chicken in milk or buttermilk for at least 2 hours before frying.

4.  Tell me about your most unforgettable meal.
It has to be the Steak & Lobster on my first date with my wife, Tonya!  We had been lobstering down in the Florida Keys and had brought back tons of it.  We cooked steak and lobster that night at my house.  Tonya came over - on a blind date, set up by our mothers! - and the rest is history.

5.  What family traditions centered around food do you look forward to most around the holidays?
Deep frying the Thanksgiving turkey.  When I was 18 years old, I decided that I would deep fry the turkey.   The women in the family were worried that it wouldn't turn out right and be ruined, so one family member decided she'd secretly make a roasted "back-up" turkey...just in case.  On Thanksgiving day, my turkey was a major hit.  The only reason that anyone ate the roasted turkey that year was because we ran out of the fried turkey!  We've fried it every year since!

6.  What are your favorite foods from childhood?
Dad's fish and hushpuppies, Catfish Fingers, Cheese Grits, and of course MeMaw's Southern Fried Chicken

7.  Which recipes from your "DADGUM That's Good!" cookbooks make up your favorite tailgating menu?
Buffalo Wings, Fried Wings, Smokey Pimento Cheese Dip, Redneck Ribs, Southern BBQ Shrimp and Bacon Burger Dogs.

8.  Which Masterbuilt product should be at the top of everyone's must-have list?
It's a close race between the electric smoker and turkey fryer.

9.  What 5 items are always stocked in your kitchen?
Green beans, sweet tea, Butterball's cajun spice, apple cider vinegar and milk

10.  What would people be surprised to find in your kitchen?
Three different popcorn machines...We are popcorn addicts!

11.  What's the most unusual thing you've ever eaten?
Roasted beetle in China.  Also - A deep fried PB & J sandwich.
